Instructions
- Preheat oven to 350°F (180°C). Grease a 9×13 inch (23×33 cm) baking sheet and line with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
- In a large bowl, beat eggs and sugar until light and fluffy. Add vegetable oil and vanilla extract; mix well.
- Fold shredded apples and chopped dates into the wet mixture.
- Gradually fold in the dry ingredients, mixing until just combined—do not overmix.
- Pour batter into prepared pan and spread evenly.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Remove from oven and let cool completely before slicing and serving.
