- 1 teaspoon vanilla extract (for whipped cream)
- 8 oz dark chocolate, chopped (for ganache)
- 1 cup heavy cream (for ganache)
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes.
- Gradually stir in boiling water until the batter is thin.
- Pour the batter into prepared pans and bake for 30-35 minutes. Cool in pans for 10 minutes before transferring to wire racks.
- Chop the drained Morello cherries and mix with reserved cherry juice.
- In a mixing bowl, beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
- Assemble the cake by layering one cake layer with half of the cherry filling and whipped cream, then add the second layer and repeat.
- Pour cooled ganache over the top and decorate with whipped cream swirls and chocolate shavings.
