Ingredients

  • 1/2 cup vegetable oil

  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries, drained and juice reserved
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • 8 oz dark chocolate, chopped (for ganache)
  • 1 cup heavy cream (for ganache)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes.
  4. Gradually stir in boiling water until the batter is thin.
  5. Pour the batter into prepared pans and bake for 30-35 minutes. Cool in pans for 10 minutes before transferring to wire racks.
  6. Chop the drained Morello cherries and mix with reserved cherry juice.
  7. In a mixing bowl, beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
  8. Assemble the cake by layering one cake layer with half of the cherry filling and whipped cream, then add the second layer and repeat.
  9. Pour cooled ganache over the top and decorate with whipped cream swirls and chocolate shavings.
