Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the egg, whole milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined, being careful not to overmix.
- In a separate bowl, combine the flour, brown sugar, and cinnamon for the crumb topping. Add cold, cubed butter and mix until crumbly.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the crumb topping generously over each muffin.
- Bake for 18-22 minutes or until a toothpick comes out clean or with a few crumbs.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool slightly.
