Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the egg, whole milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until just combined, being careful not to overmix.
  5. In a separate bowl, combine the flour, brown sugar, and cinnamon for the crumb topping. Add cold, cubed butter and mix until crumbly.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle the crumb topping generously over each muffin.
  7. Bake for 18-22 minutes or until a toothpick comes out clean or with a few crumbs.
