- 4 bone-in, skin-on chicken thighs
- 4 tablespoons unsalted butter
- 2 tablespoons fresh thyme
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh parsley
- 4 cloves garlic, minced
- Zest of 1 lemon
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.
- In a mixing bowl, combine softened unsalted butter with chopped thyme, rosemary, parsley, minced garlic, lemon zest, salt, and black pepper. Mix until well combined.
- Preheat the oven to 425°F (220°C). In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken thighs skin-side down and sear for 5-7 minutes until golden brown and crispy. Flip and cook for an additional 3-4 minutes.
- Reduce heat to medium-low, spoon the herb butter over the chicken thighs, and bake until cooked through. Let rest for 5 minutes before serving.
