Ingredients
- Heavy Cream: 2 cups (500 ml)
- Whole Milk: 1/2 cup (120 ml)
- Sugar: 1/2 cup (100 g)
- Egg Yolks: 4 large
- Vanilla Extract: 1 teaspoon
- Tapioca Pearls: 1/2 cup (120 g) cooked
Instructions
- Prepare the tapioca pearls according to package instructions.
- In a saucepan, heat heavy cream and whole milk until hot, then stir in sugar and vanilla extract.
- Whisk egg yolks in a separate bowl, then gradually mix in the hot cream mixture while whisking.
- Strain the mixture into a measuring cup to ensure a smooth custard.
- Divide cooked tapioca pearls into ramekins and pour custard mixture over them.
- Bake in a water bath at 325°F (160°C) for 30-35 minutes until edges are set.
- Cool to room temperature, refrigerate for at least 2 hours, then caramelize sugar on top before serving.
