Description

Crème Brûlée Bubble Tea is a delightful fusion of creamy crème brûlée and chewy bubble tea, featuring a smooth custard base topped with a crispy caramel layer and filled with tapioca pearls.


Ingredients

  • Heavy Cream: 2 cups (500 ml)
  • Whole Milk: 1/2 cup (120 ml)
  • Sugar: 1/2 cup (100 g)
  • Egg Yolks: 4 large
  • Vanilla Extract: 1 teaspoon
  • Tapioca Pearls: 1/2 cup (120 g) cooked

Instructions

  1. Prepare the tapioca pearls according to package instructions.
  2. In a saucepan, heat heavy cream and whole milk until hot, then stir in sugar and vanilla extract.
  3. Whisk egg yolks in a separate bowl, then gradually mix in the hot cream mixture while whisking.
  4. Strain the mixture into a measuring cup to ensure a smooth custard.
  5. Divide cooked tapioca pearls into ramekins and pour custard mixture over them.
  6. Bake in a water bath at 325°F (160°C) for 30-35 minutes until edges are set.
  7. Cool to room temperature, refrigerate for at least 2 hours, then caramelize sugar on top before serving.
