- 1 cup ube puree
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup coconut cream
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a mixing bowl and press into the bottom of a 9-inch springform pan.
- Bake the crust for about 10 minutes and let it cool completely.
- In a large mixing bowl, beat the softened cream cheese until smooth, then add granulated sugar and mix well.
- Mix in the ube puree until fully incorporated.
- Add eggs one at a time, mixing well after each addition, then stir in the coconut cream.
- Pour the ube cheesecake filling over the cooled crust and spread evenly.
- Bake for 50-60 minutes until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour.
- Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
