Description

Creamy lobster Tuscan pasta is a delightful combination of rich flavors and textures that will transport your taste buds straight to Italy. This dish features tender lobster meat mingling with creamy sauce, fresh spinach, and sun-dried tomatoes, all tossed with perfectly cooked fettuccine.

Ingredients

Scale
  • 2 lobster tails (about 1 lb total), cooked and meat removed, chopped
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Prepare the lobster by cooking fresh lobster tails in boiling water for 5-7 minutes, then chop the meat into bite-sized pieces.
  2. Cook the fettuccine in salted boiling water according to package instructions until al dente, then drain and reserve 1/2 cup of pasta water.
  3. In a large skillet, heat olive oil and sauté minced garlic until fragrant. Add sun-dried tomatoes and cook for 2-3 minutes, then add fresh spinach and cook until wilted.
  4. Pour in heavy cream, add Italian seasoning, and season with salt and pepper. Allow the sauce to thicken for 3-5 minutes.
  5. Combine the cooked fettuccine and chopped lobster meat with the sauce, tossing gently. Adjust the sauce consistency with reserved pasta water if needed.
  6. Stir in grated Parmesan cheese until melted, adjust seasoning, and serve garnished with fresh basil or parsley.

Notes

  • Use fresh lobster for the best flavor.
  • Reserve pasta water to adjust sauce consistency.
  • Consider adding a splash of white wine for extra depth.
  • Experiment with different types of pasta or seafood alternatives.
