Ingredients
- Rotini pasta: 2 cups (uncooked)
- Cherry tomatoes: 1 cup, halved
- Cucumber: 1 medium, diced
- Bell peppers: 1 cup, diced
- Red onion: 1/2 medium, finely chopped
- Black olives: 1/2 cup, sliced
- Mayonnaise: 1/2 cup
- Sour cream: 1/2 cup
- Garlic powder: 1 teaspoon
- Salt: to taste
- Pepper: to taste
Instructions
- Cook the rotini pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine mayonnaise and sour cream. Add garlic powder, salt, and pepper, and mix until smooth.
- Add the cooled rotini pasta to the dressing and gently fold in cherry tomatoes, cucumber, bell peppers, red onion, and black olives.
- Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
- Stir the salad before serving and adjust seasoning if necessary.
