Ingredients

  • Fettuccine pasta: 300 grams (about 10.5 ounces)
  • Assorted mushrooms: 400 grams (about 14 ounces) including cremini, shiitake, and button
  • Heavy cream: 250 milliliters (about 1 cup)
  • Garlic: 3 cloves, minced
  • Shallots: 2 finely chopped
  • Parmesan cheese: 100 grams (about 1 cup), grated
  • Fresh thyme: 2 tablespoons, chopped
  • Olive oil: 2 tablespoons
  • Salt and black pepper: to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine pasta until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat olive oil over medium heat. Sauté shallots and garlic for 2-3 minutes until fragrant. Add assorted mushrooms and cook for 5-7 minutes until browned.
  3. Lower the heat and pour in the heavy cream, stirring to combine. Simmer for 3-4 minutes until slightly thickened, adding reserved pasta water if necessary.
  4. Add the cooked fettuccine to the skillet, tossing to coat in the sauce. Stir in Parmesan cheese and fresh thyme until well combined.
  5. Serve warm, garnished with additional thyme and Parmesan cheese.
