Ingredients

- Assorted mushrooms: 400 grams (about 14 ounces) including cremini, shiitake, and button
- Heavy cream: 250 milliliters (about 1 cup)
- Garlic: 3 cloves, minced
- Shallots: 2 finely chopped
- Parmesan cheese: 100 grams (about 1 cup), grated
- Fresh thyme: 2 tablespoons, chopped
- Olive oil: 2 tablespoons
- Salt and black pepper: to taste
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine pasta until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat olive oil over medium heat. Sauté shallots and garlic for 2-3 minutes until fragrant. Add assorted mushrooms and cook for 5-7 minutes until browned.
- Lower the heat and pour in the heavy cream, stirring to combine. Simmer for 3-4 minutes until slightly thickened, adding reserved pasta water if necessary.
- Add the cooked fettuccine to the skillet, tossing to coat in the sauce. Stir in Parmesan cheese and fresh thyme until well combined.
- Serve warm, garnished with additional thyme and Parmesan cheese.
