- 2 chicken breasts (about 1 lb or 450 g), diced
- 1 package of gnocchi (about 16 oz or 450 g)
- 4 cloves of garlic, minced
- 1 cup (240 ml) heavy cream
- 1/4 cup (60 ml) lemon juice (freshly squeezed)
- 2 cups (about 60 g) fresh spinach
- 1/2 cup (50 g) grated Parmesan cheese, plus extra for serving
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and black pepper.
- Cook the gnocchi in a large pot of salted boiling water according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium-high heat, add the chicken, and cook until golden brown and cooked through. Remove and set aside.
- Add minced garlic to the same skillet and sauté until fragrant, then pour in heavy cream and lemon juice, stirring to combine and simmer for 3-4 minutes.
- Add the cooked gnocchi and chicken back to the skillet, stir in fresh spinach, and cook for an additional 2-3 minutes.
- Remove from heat, stir in grated Parmesan cheese, adjust seasoning, and serve warm with extra cheese and black pepper on top.

- Be careful not to overcook the chicken to avoid dryness.
- Watch the garlic closely to prevent burning.
- Drain the gnocchi well to avoid diluting the sauce.
