- 300 grams (10 oz) shrimp, peeled and deveined
- 250 grams (9 oz) fettuccine pasta
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 400 ml (14 oz) coconut milk
- 2 tablespoons jerk seasoning
- 2 tablespoons lime juice
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Rinse the shrimp under cold water, pat dry, and season with salt, pepper, and jerk seasoning.
- Bring a large pot of salted water to a boil, add fettuccine, and cook according to package instructions (8-10 minutes). Drain and reserve a cup of pasta water.
- In a large skillet, heat olive oil over medium heat, sauté diced onion for 2-3 minutes, add minced garlic, and cook for another minute. Then add sliced bell peppers and cook for 4-5 minutes.
- Add shrimp to the skillet, season, and cook for 3-4 minutes until pink and opaque. Pour in coconut milk and lime juice, simmer for 5 minutes, adjusting with reserved pasta water if needed.
- Add cooked fettuccine to the skillet, toss to coat in the sauce, heat through for 2 minutes, and garnish with fresh cilantro before serving.
