Ingredients

  • 1 lb (450 g) gnocchi
  • 2 cups (about 300 g) cooked shredded chicken
  • 8 oz (225 g) cream cheese
  • 1 packet (1 oz or 28 g) ranch seasoning mix
  • 1 cup (about 100 g) shredded cheddar cheese
  • 4 green onions, sliced
  • 6 slices of bacon, cooked and crumbled
  • 1 cup (240 ml) chicken broth
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by shredding it into bite-sized pieces.
  2. Cook the gnocchi in a large pot of salted boiling water until they float, about 2-3 minutes, then drain.
  3. In a large skillet, simmer chicken broth, then add softened cream cheese and ranch seasoning, stirring until smooth.
  4. Combine shredded chicken, half of the crumbled bacon, and half of the cheddar cheese into the sauce, then gently fold in the cooked gnocchi.
  5. Season with salt and pepper, top with remaining cheddar cheese, and serve garnished with bacon and green onions.

  • Overcooking the gnocchi can make them mushy.
