Instructions

  1. Prepare the seafood by ensuring shrimp are peeled and deveined, and crab meat is cooked and shredded.
  2. Heat olive oil in a large pot over medium heat, then sauté onion, celery, and carrots for 5-7 minutes until softened.
  3. Add garlic, thyme, and bay leaves, cooking for an additional 1-2 minutes before pouring in the seafood stock. Simmer for 15 minutes.
  4. Remove bay leaves and blend the soup until smooth using an immersion blender or countertop blender.
  5. Stir in heavy cream and bring to a simmer, then fold in crab meat and shrimp, cooking for an additional 5-7 minutes. Season with salt and pepper, and add sherry if desired. Serve warm, garnished with parsley.
