Ingredients

  • Fettuccine pasta: 300 grams (about 10.5 ounces)
  • Cooked chicken breast: 2 cups, shredded or diced
  • Sun-dried tomatoes: 1 cup, chopped (preferably packed in oil)
  • Heavy cream: 1 cup (240 ml)
  • Garlic: 3 cloves, minced
  • Parmesan cheese: 1 cup, grated
  • Fresh basil: 1/4 cup, chopped (plus extra for garnish)
  • Olive oil: 2 tablespoons
  • Salt: to taste
  • Black pepper: to taste

Instructions

  1. Cook the fettuccine pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. If using fresh chicken, season and cook it until fully cooked, then shred or dice it.
  3. In a large skillet, heat olive oil over medium heat, sauté garlic until fragrant, then add sun-dried tomatoes and cook for 2-3 minutes.
  4. Pour in heavy cream, bring to a gentle simmer, and stir in Parmesan cheese until melted and smooth. Adjust consistency with reserved pasta water if needed.
  5. Add cooked chicken and fettuccine to the skillet, tossing to coat in the sauce. Season with salt and black pepper to taste.
  6. Stir in chopped fresh basil, heat through, then serve garnished with additional basil and Parmesan cheese.
