Ingredients
- Fettuccine pasta: 300 grams (about 10.5 ounces)
- Cooked chicken breast: 2 cups, shredded or diced
- Sun-dried tomatoes: 1 cup, chopped (preferably packed in oil)
- Heavy cream: 1 cup (240 ml)
- Garlic: 3 cloves, minced
- Parmesan cheese: 1 cup, grated
- Fresh basil: 1/4 cup, chopped (plus extra for garnish)
- Olive oil: 2 tablespoons
- Salt: to taste
- Black pepper: to taste
Instructions
- Cook the fettuccine pasta in salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
- If using fresh chicken, season and cook it until fully cooked, then shred or dice it.
- In a large skillet, heat olive oil over medium heat, sauté garlic until fragrant, then add sun-dried tomatoes and cook for 2-3 minutes.
- Pour in heavy cream, bring to a gentle simmer, and stir in Parmesan cheese until melted and smooth. Adjust consistency with reserved pasta water if needed.
- Add cooked chicken and fettuccine to the skillet, tossing to coat in the sauce. Season with salt and black pepper to taste.
- Stir in chopped fresh basil, heat through, then serve garnished with additional basil and Parmesan cheese.

- For a vegetarian option, replace chicken with mushrooms or zucchini.
