Ingredients
- Chicken breasts: 4 pieces (about 1.5 lbs or 680 g)
- Fresh spinach: 4 cups (about 120 g)
- Mushrooms: 8 oz (about 225 g), sliced
- Garlic: 3 cloves, minced
- Heavy cream: 1 cup (240 ml)
- Parmesan cheese: 1/2 cup (about 50 g), grated
- Olive oil: 2 tablespoons (30 ml)
- Salt: to taste
- Black pepper: to taste
Instructions
- Season the chicken breasts on both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and fully cooked.
- Remove the chicken from the skillet and set aside. In the same skillet, add sliced mushrooms and cook for 4-5 minutes.
- Add minced garlic and sauté for an additional 1-2 minutes, then add fresh spinach and cook until wilted.
- Pour in heavy cream and simmer for 3-4 minutes to thicken the sauce.
- Stir in grated Parmesan cheese, adjust seasoning, and return the chicken to the skillet. Cook for an additional 2-3 minutes to heat through.
