  • 8 oz (225 g) fettuccine pasta
  • 5 oz (150 g) Boursin cheese (garlic and herbs flavor)
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Black pepper, to taste
  • Salt, to taste
  • Grated Parmesan cheese, for serving (optional)
  • 1 teaspoon Italian seasoning (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup sliced mushrooms (optional)
  • 1/4 cup sun-dried tomatoes (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  2. In a large pot, bring salted water to a boil and cook fettuccine according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
  3. In the same skillet, sauté minced garlic for 30 seconds, then add halved cherry tomatoes and cook for 2-3 minutes. Add fresh spinach and cook until wilted.
  4. Reduce heat to low, add cooked fettuccine, Boursin cheese, and a splash of reserved pasta water. Toss gently until the cheese melts and coats the pasta. Adjust consistency with more pasta water if needed.
  5. Serve the pasta topped with sliced chicken, black pepper, and grated Parmesan cheese if desired. Enjoy warm!
