- 2 chicken breasts (about 1 lb or 450 g)
- 8 oz (225 g) fettuccine pasta
- 5 oz (150 g) Boursin cheese (garlic and herbs flavor)
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Black pepper, to taste
- Salt, to taste
- Grated Parmesan cheese, for serving (optional)
- 1 teaspoon Italian seasoning (optional)
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup sliced mushrooms (optional)
- 1/4 cup sun-dried tomatoes (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Season the chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
- In a large pot, bring salted water to a boil and cook fettuccine according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water before draining.
- In the same skillet, sauté minced garlic for 30 seconds, then add halved cherry tomatoes and cook for 2-3 minutes. Add fresh spinach and cook until wilted.
- Reduce heat to low, add cooked fettuccine, Boursin cheese, and a splash of reserved pasta water. Toss gently until the cheese melts and coats the pasta. Adjust consistency with more pasta water if needed.
- Serve the pasta topped with sliced chicken, black pepper, and grated Parmesan cheese if desired. Enjoy warm!
