- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine the pumpkin puree, sugar, eggs, oil (or melted butter), and vanilla extract. Whisk until smooth.
- Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
- In a medium bowl, beat the cream cheese until smooth, then mix in the powdered sugar and remaining vanilla extract.
- Pour half of the pumpkin batter into the prepared loaf pan, then spoon dollops of the cream cheese mixture over it. Swirl gently with a knife.
- Pour the remaining pumpkin batter on top and repeat the swirling process with the rest of the cream cheese mixture.
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve warm or at room temperature.
