Description

Ingredients

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, sugar, eggs, oil (or melted butter), and vanilla extract. Whisk until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir gently until just combined.
  5. In a medium bowl, beat the cream cheese until smooth, then mix in the powdered sugar and remaining vanilla extract.
  6. Pour half of the pumpkin batter into the prepared loaf pan, then spoon dollops of the cream cheese mixture over it. Swirl gently with a knife.
  7. Pour the remaining pumpkin batter on top and repeat the swirling process with the rest of the cream cheese mixture.
  8. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve warm or at room temperature.
