- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- Zest of 1 orange
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 large eggs
- 1/4 cup orange juice
- 2 teaspoons vanilla extract
- 1 1/2 cups fresh or frozen cranberries
Instructions
- Preheat the oven to 400°F (200°C). Line a muffin pan with paper liners.
- In a large bowl, sift together the flour, baking powder, and salt.
- In another bowl, combine sugar and orange zest. Work the zest into the sugar with your fingers. Then whisk in the oil, milk, eggs, orange juice, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in cranberries carefully.
- Fill the muffin liners two-thirds full with batter. Optionally, sprinkle sugar on top.
- Bake for 25 minutes or until a toothpick comes out clean. Cool for 5-10 minutes before transferring to a wire rack.
Notes
- Don’t overmix the batter to avoid dense muffins.
- Use fresh cranberries for the best flavor. If using frozen, do not thaw them.
- For extra flavor, add a touch of orange extract along with the juice.
