  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • Zest of 1 orange
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup orange juice
  • 2 teaspoons vanilla extract
  • 1 1/2 cups fresh or frozen cranberries

Instructions

  1. Preheat the oven to 400°F (200°C). Line a muffin pan with paper liners.
  2. In a large bowl, sift together the flour, baking powder, and salt.
  3. In another bowl, combine sugar and orange zest. Work the zest into the sugar with your fingers. Then whisk in the oil, milk, eggs, orange juice, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in cranberries carefully.
  5. Fill the muffin liners two-thirds full with batter. Optionally, sprinkle sugar on top.
  6. Bake for 25 minutes or until a toothpick comes out clean. Cool for 5-10 minutes before transferring to a wire rack.

  • Use fresh cranberries for the best flavor. If using frozen, do not thaw them.
