- 3/4 cup unsalted butter, softened to room temperature
- 2/3 cup granulated sugar, plus more for rolling
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 2 cups plus 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 2 tablespoons orange juice
- 1 teaspoon orange zest
- 3/4 cup very finely chopped dried cranberries
- Optional: coarse sugar for rolling
Instructions
- In a large bowl, beat together softened butter and granulated sugar with an electric mixer until creamy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add flour and salt, beating on low speed.
- Pour in the orange juice and add the orange zest, then fold in chopped cranberries.
- Divide the dough and roll into logs, wrap in plastic wrap, and chill for at least 3 hours.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll chilled logs in coarse sugar if desired, then slice each log into 12 pieces.
- Arrange slices on baking sheet and bake for 13-15 minutes until edges are lightly golden.
- Cool on a baking sheet briefly then transfer to a wire rack.
- Prepare icing by whisking confectioner’s sugar and orange juice until smooth, then drizzle over cooled cookies.
Notes
For best results, chill the dough long enough to maintain cookie shape, and use fresh orange juice for flavor.
