Ingredients

  • 1 small head of cabbage, chopped
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 tsp black pepper
  • 1 tsp thyme
  • 2 bay leaves

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add diced corned beef and cook for 5 minutes.
  3. Pour in beef broth and bring to a boil.
  4. Add potatoes, carrots, and spices.
  5. Reduce heat and simmer for 30 minutes.
  6. Add cabbage and cook for another 15 minutes.
  7. Remove bay leaves before serving.
