Instructions
- Prepare the vegetables by draining and rinsing the black beans and corn, then dicing the tomatoes, bell pepper, and red onion, and finally dicing the avocado.
- Combine the black beans, corn, diced tomatoes, red onion, bell pepper, avocado, and cilantro in a large mixing bowl.
- Make the dressing by whisking together lime juice, olive oil, cumin, chili powder, salt, and pepper in a small bowl.
- Pour the dressing over the vegetable mixture and gently toss to coat.
- Chill in the refrigerator for about 30 minutes before serving for the best flavor.
