A delightful dish that combines the rich flavors of cowboy butter with tender chicken and perfectly cooked linguine, creating a comforting and impressive meal.
Ingredients
- Linguine pasta: 300 grams (about 10.5 oz)
- Chicken breast: 2 pieces (approximately 500 grams or 1 lb)
- Unsalted butter: 100 grams (about 7 tablespoons)
- Garlic: 4 cloves, minced
- Lemon juice: 2 tablespoons (freshly squeezed)
- Fresh parsley: 2 tablespoons, chopped
- Paprika: 1 teaspoon
- Cayenne pepper: 1/4 teaspoon (adjust to taste)
- Cherry tomatoes: 250 grams (about 2 cups), halved
- Olive oil: 2 tablespoons
- Salt and black pepper: to taste
Instructions
- Prepare the chicken by rinsing and patting it dry, then season with salt and black pepper.
- Make the cowboy butter sauce by melting unsalted butter, sautéing minced garlic, and mixing in lemon juice, parsley, paprika, and cayenne pepper.
- Cook the linguine in salted boiling water until al dente, reserving some pasta water before draining.
- In a skillet, heat olive oil, cook halved cherry tomatoes, then add cooked linguine and sliced chicken, pouring the cowboy butter sauce over the top.
- Toss everything together gently, adding reserved pasta water to achieve desired sauce consistency, then serve garnished with fresh basil leaves.
Notes
- Use fresh ingredients for the best flavor.
- Don’t overcook the chicken; it should be golden brown and no longer pink inside.
- Reserve pasta water to adjust sauce consistency.
- Adjust spice levels to your preference.
