Description
Cornbread muffins are a delightful, slightly sweet, and crumbly treat. Perfect for breakfast, snacks, or as a side dish with chili or barbecued meats.
Ingredients
Scale
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil (or melted butter)
- 1 large egg
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 400°F (200°C) and prepare a muffin pan by greasing or lining with muffin liners.
- Combine dry ingredients (cornmeal, flour, sugar, baking powder, and salt) in a large bowl.
- In another bowl, whisk together wet ingredients (milk, oil, and egg) until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
- Fold in optional nuts if desired.
- Fill each muffin cup about two-thirds full and bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Do not overmix the batter to avoid tough muffins.
- Ensure the oven is preheated before baking for even results.
- For extra moisture, consider adding sour cream or yogurt to the batter.
