Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
2. Mix the Wet Ingredients:
In a large mixing bowl, whisk together the coconut oil, brown sugar, applesauce, and vanilla extract until smooth. The applesauce will replace the butter and give your cookies a soft, chewy texture.
3. Combine the Dry Ingredients:
In a separate bowl, sift the flour, baking soda, salt, and cinnamon (if using). Make sure the ingredients are well combined.
4. Combine Wet and Dry Ingredients:
