Ingredients

  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 and 1/4 cups mini semi-sweet chocolate chips
  • 3 cups vanilla ice cream or desired flavor
  • 1 cup mini chocolate chips, sprinkles, or finely chopped nuts (for rolling the edges)

Instructions

  1. Preheat oven to 350°F (175°C) and line three large baking sheets with parchment paper.
  2. In a medium bowl, whisk flour, cornstarch, baking soda, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg, egg yolk, and vanilla extract until combined.
  5. Gradually mix in the dry ingredients until just combined. Fold in mini chocolate chips.
  6. Scoop dough into 1.5 tablespoon balls and space 3 inches apart on baking sheets.
  7. Bake for 12–13 minutes or until edges are golden and centers are soft. Cool on sheets for 5 minutes, then transfer to a wire rack.
  8. Once completely cooled, place a scoop of ice cream on one cookie and sandwich with another. Gently press together.
  9. Roll the edges in mini chips, sprinkles, or nuts. Wrap each sandwich in plastic wrap.
  10. Freeze for at least 3 hours before serving.
