- 1 teaspoon baking soda

- 3/4 cup unsalted butter, softened to room temperature
- 3/4 cup packed light or dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 egg yolk, at room temperature
- 2 teaspoons pure vanilla extract
- 1 and 1/4 cups mini semi-sweet chocolate chips
- 3 cups vanilla ice cream or desired flavor
- 1 cup mini chocolate chips, sprinkles, or finely chopped nuts (for rolling the edges)
Instructions
- Preheat oven to 350°F (175°C) and line three large baking sheets with parchment paper.
- In a medium bowl, whisk flour, cornstarch, baking soda, and salt.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, egg yolk, and vanilla extract until combined.
- Gradually mix in the dry ingredients until just combined. Fold in mini chocolate chips.
- Scoop dough into 1.5 tablespoon balls and space 3 inches apart on baking sheets.
- Bake for 12–13 minutes or until edges are golden and centers are soft. Cool on sheets for 5 minutes, then transfer to a wire rack.
- Once completely cooled, place a scoop of ice cream on one cookie and sandwich with another. Gently press together.
- Roll the edges in mini chips, sprinkles, or nuts. Wrap each sandwich in plastic wrap.
- Freeze for at least 3 hours before serving.
