  • 2 teaspoons pure vanilla extract
  • 1/2 cup full-fat sour cream, at room temperature
  • 1/2 cup whole milk, at room temperature
  • 1/2 cup rainbow sprinkles, plus extra for garnish
  • Vanilla buttercream or your choice of frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-count muffin pan with cupcake liners. Prepare a second pan for the extra 2 cupcakes.
  2. In a bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat the softened butter and sugar on high speed for 2 minutes until creamy.
  4. Add egg whites and vanilla extract; beat on medium-high speed until fully combined.
  5. Mix in the sour cream until incorporated.
  6. With the mixer on low, gradually add the dry ingredients, mixing just until combined.
  7. Slowly pour in the milk and mix until smooth. Do not overmix.
  8. Gently fold in the rainbow sprinkles using a spatula.
  9. Fill each cupcake liner about 2/3 full and bake for 19–22 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cupcakes cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  11. Once cooled, frost with vanilla buttercream and garnish with extra sprinkles.
