Ingredients

- Powdered sugar: 200 grams
- Egg whites: 100 grams (about 3 large eggs)
- Granulated sugar: 50 grams
- Espresso powder: 1 tablespoon
- Butter (unsalted): 100 grams, softened (for filling)
- Powdered sugar (for buttercream filling): 150 grams
- Vanilla extract: 1 teaspoon
- Milk: 1-2 tablespoons (optional)
Instructions
- Sift together the almond flour and powdered sugar in a bowl and set aside.
- Beat the egg whites in a clean mixing bowl until foamy, then gradually add granulated sugar and beat until stiff peaks form.
- Gently fold the sifted almond flour and powdered sugar mixture into the meringue, adding espresso powder until smooth and glossy.
- Transfer the batter into a piping bag and pipe small circles onto prepared baking sheets, leaving space between each.
- Let the piped macarons rest at room temperature for 30-60 minutes, then bake in a preheated oven at 150°C (300°F) for 15-20 minutes.
- Allow the macarons to cool completely before filling them with buttercream.
