Ingredients

  • Almond flour: 120 grams
  • Powdered sugar: 200 grams
  • Egg whites: 100 grams (about 3 large eggs)
  • Granulated sugar: 50 grams
  • Espresso powder: 1 tablespoon
  • Butter (unsalted): 100 grams, softened (for filling)
  • Powdered sugar (for buttercream filling): 150 grams
  • Vanilla extract: 1 teaspoon
  • Milk: 1-2 tablespoons (optional)

Instructions

  1. Sift together the almond flour and powdered sugar in a bowl and set aside.
  2. Beat the egg whites in a clean mixing bowl until foamy, then gradually add granulated sugar and beat until stiff peaks form.
  3. Gently fold the sifted almond flour and powdered sugar mixture into the meringue, adding espresso powder until smooth and glossy.
  4. Transfer the batter into a piping bag and pipe small circles onto prepared baking sheets, leaving space between each.
  5. Let the piped macarons rest at room temperature for 30-60 minutes, then bake in a preheated oven at 150°C (300°F) for 15-20 minutes.
  6. Allow the macarons to cool completely before filling them with buttercream.
