  • 1 tsp baking soda
  • 250ml (1 cup) boiling water
  • 100g (1/2 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar, packed
  • 2 large eggs
  • 150g (1 1/4 cups) all-purpose flour
  • 50g (1/2 cup) desiccated coconut
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 150g (1 cup) pineapple chunks, finely chopped
  • 50ml (3 tbsp) dark rum
  • 1 tsp vanilla extract

For the Rum-Caramel Sauce:

  • 100g (1/2 cup) unsalted butter
  • 100g (1/2 cup) brown sugar
  • 100ml (1/2 cup) double cream
  • 50ml (3 tbsp) dark rum
  • 1 tsp vanilla extract

Instructions

  1. Gather all your ingredients.
  2. Prepare the base by soaking chopped dates in boiling water with baking soda for 15 minutes.
  3. Cream together softened butter and brown sugar until light and fluffy, then add eggs and vanilla extract.
  4. Sift and fold in the dry ingredients, then add soaked dates, pineapple chunks, and dark rum.
  5. Pour the batter into a baking dish and bake at 180°C (350°F) for 35-40 minutes.
  6. Once baked, pour half of the rum-caramel sauce over the pudding and let it absorb for 10 minutes.
  7. Serve by cutting into squares and drizzling with remaining rum-caramel sauce.
