- 250ml (1 cup) boiling water
- 100g (1/2 cup) unsalted butter, softened
- 150g (3/4 cup) brown sugar, packed
- 2 large eggs
- 150g (1 1/4 cups) all-purpose flour
- 50g (1/2 cup) desiccated coconut
- 1 tsp baking powder
- 1/4 tsp salt
- 150g (1 cup) pineapple chunks, finely chopped
- 50ml (3 tbsp) dark rum
- 1 tsp vanilla extract
For the Rum-Caramel Sauce:
- 100g (1/2 cup) unsalted butter
- 100g (1/2 cup) brown sugar
- 100ml (1/2 cup) double cream
- 50ml (3 tbsp) dark rum
- 1 tsp vanilla extract
Instructions
- Gather all your ingredients.
- Prepare the base by soaking chopped dates in boiling water with baking soda for 15 minutes.
- Cream together softened butter and brown sugar until light and fluffy, then add eggs and vanilla extract.
- Sift and fold in the dry ingredients, then add soaked dates, pineapple chunks, and dark rum.
- Pour the batter into a baking dish and bake at 180°C (350°F) for 35-40 minutes.
- Once baked, pour half of the rum-caramel sauce over the pudding and let it absorb for 10 minutes.
- Serve by cutting into squares and drizzling with remaining rum-caramel sauce.
