Description

A tropical layered dessert with a buttery graham cracker crust, creamy coconut pineapple cream cheese filling, pineapple Jell-O layer, topped with whipped cream, toasted coconut, and cherries.

  • 1 cup sweetened cream of coconut
  • 3/4 cup confectioners’ sugar
  • 1/4 cup sour cream
  • 1/4 cup fresh lime juice
  • 1 (1.25-ounce) packet unflavored gelatin
  • 8.75 ounces small square shortbread cookies
  • 1 1/4 cups pineapple juice
  • 1 (3-ounce) box pineapple Jell-O
  • 1 (20-ounce) can crushed pineapple
  • 8 ounces store-bought whipped topping
  • Maraschino cherries for garnish

Instructions

  1. Combine graham cracker crumbs, granulated sugar, toasted coconut flakes, kosher salt; stir in melted butter. Press into 13×9-inch dish and freeze 20 mins.
  2. Whisk cream cheese, cream of coconut, confectioners’ sugar, and sour cream until smooth. Warm lime juice, dissolve gelatin in it, then mix into cream cheese mixture.
  3. Pour cream cheese mixture over crust; refrigerate 1.5-2 hours until firm.
  4. Layer shortbread cookies evenly on set cream cheese layer.
  5. Warm pineapple juice, dissolve pineapple Jell-O, stir in crushed pineapple. Pour over cookies; chill about 1.5 hours until set.
  6. Top with whipped topping, sprinkle toasted coconut flakes, garnish with Maraschino cherries. Chill further before serving.

  • Allow each layer to fully set to maintain clean layers.
  • Use room temperature cream cheese for smooth filling without lumps.
  • Do not overmix after adding gelatin to avoid deflating mixture.
