- 10 cups of popped popcorn (about 1/2 cup unpopped kernels)
- 1 cup of brown sugar, packed
- 1/2 cup of unsalted butter (1 stick)
- 1/4 cup of light corn syrup
- 1 teaspoon of vanilla extract
- 1 cup of sweetened coconut flakes
- 1/2 teaspoon of sea salt (or to taste)
Instructions
- Pop the popcorn using an air popper or stovetop method, then transfer to a large mixing bowl.
- In a medium saucepan, combine brown sugar, butter, and corn syrup over medium heat, stirring until it boils. Cook without stirring for 4-5 minutes until golden.
- Remove from heat, stir in vanilla extract and sea salt, then pour the caramel over the popcorn and toss to coat.
- Spread the caramel-coated popcorn on a baking sheet lined with parchment paper and bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes.
- Let cool completely, then break into clusters and enjoy!
