Ingredients

  • 0.75 cup all-purpose flour
  • 0.5 cup brown sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 1 cup milk
  • 1 egg, slightly beaten
  • 0.25 cup honey or molasses
  • 0.25 cup canola oil
  • 0.75 to 1 cup raisins

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a muffin pan by greasing or lining it with paper liners.
  2. In a large bowl, combine oat bran, flour, brown sugar, baking powder, salt, and cinnamon. Stir well to mix the dry ingredients.
  3. In a separate bowl, whisk together the milk, egg, honey or molasses, and canola oil until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in raisins.
  5. Fill muffin cups about three-quarters full. Bake for 20-22 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
