- 1.5 cups oat bran
- 0.75 cup all-purpose flour
- 0.5 cup brown sugar
- 2 teaspoons baking powder
- 0.5 teaspoon salt
- 0.25 teaspoon ground cinnamon
- 1 cup milk
- 1 egg, slightly beaten
- 0.25 cup honey or molasses
- 0.25 cup canola oil
- 0.75 to 1 cup raisins
Instructions
- Preheat the oven to 400°F (200°C) and prepare a muffin pan by greasing or lining it with paper liners.
- In a large bowl, combine oat bran, flour, brown sugar, baking powder, salt, and cinnamon. Stir well to mix the dry ingredients.
- In a separate bowl, whisk together the milk, egg, honey or molasses, and canola oil until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in raisins.
- Fill muffin cups about three-quarters full. Bake for 20-22 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Be careful not to overmix the batter to avoid dense muffins.
- If you’re using non-dairy milk, almond milk or soy milk are great alternatives.
- Measure your flour accurately to avoid overly dry muffins.
