- 1/2 teaspoon salt
- 3 large eggs
- 1 can (12 ounces) evaporated milk
Instructions
- Combine the flour and salt in a large bowl. Add chilled butter pieces and mix until the mixture resembles coarse crumbs. Add ice water gradually until the dough comes together, then refrigerate for at least an hour.
- Preheat the oven to 425°F (220°C). Roll the dough on a floured surface to fit a 9-inch pie pan. Prick the crust with a fork and freeze for 15 minutes.
- In a large bowl, whisk together pumpkin puree, sugar, cinnamon, nutmeg, ginger, cloves, salt, eggs, and evaporated milk until smooth and well combined.
- Pour the pumpkin filling into the prepared pie crust. Bake at 425°F (220°C) for 15 minutes, then lower the temperature to 350°F (175°C) and bake for 40-50 minutes until the filling is set.
- Let the pie cool on a wire rack for at least two hours before serving.
Notes
- For a dairy-free version, substitute coconut milk for evaporated milk.
- If you don’t have pumpkin puree, use homemade puree made from roasted pumpkin.
- Use brown sugar instead of granulated sugar for a richer flavor.
