  • 3 large eggs
  • 1 can (12 ounces) evaporated milk

Instructions

  1. Combine the flour and salt in a large bowl. Add chilled butter pieces and mix until the mixture resembles coarse crumbs. Add ice water gradually until the dough comes together, then refrigerate for at least an hour.
  2. Preheat the oven to 425°F (220°C). Roll the dough on a floured surface to fit a 9-inch pie pan. Prick the crust with a fork and freeze for 15 minutes.
  3. In a large bowl, whisk together pumpkin puree, sugar, cinnamon, nutmeg, ginger, cloves, salt, eggs, and evaporated milk until smooth and well combined.
  4. Pour the pumpkin filling into the prepared pie crust. Bake at 425°F (220°C) for 15 minutes, then lower the temperature to 350°F (175°C) and bake for 40-50 minutes until the filling is set.
