- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter (melted)
- ¼ cup granulated sugar
- 4 (8 oz) packages of cream cheese (softened)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- ½ teaspoon lemon juice (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan and bake for 10 minutes.
- Beat softened cream cheese and sugar until smooth. Add vanilla extract and lemon juice, then add eggs one by one, mixing on low speed after each addition.
- Fold in sour cream and pour the mixture over the cooled crust.
- Wrap the bottom of the springform pan in aluminum foil and place it in a larger baking dish filled with hot water. Bake for 55-70 minutes until the edges are set and the center slightly jiggles.
- Turn off the oven, crack the oven door, and cool for 1 hour. Refrigerate for at least 4 hours or overnight before serving.
