Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ¼ cup granulated sugar
  • 4 (8 oz) packages of cream cheese (softened)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ½ teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a 9-inch springform pan and bake for 10 minutes.
  3. Beat softened cream cheese and sugar until smooth. Add vanilla extract and lemon juice, then add eggs one by one, mixing on low speed after each addition.
  4. Fold in sour cream and pour the mixture over the cooled crust.
  5. Wrap the bottom of the springform pan in aluminum foil and place it in a larger baking dish filled with hot water. Bake for 55-70 minutes until the edges are set and the center slightly jiggles.
  6. Turn off the oven, crack the oven door, and cool for 1 hour. Refrigerate for at least 4 hours or overnight before serving.
