- 4 tablespoons unsalted butter
- 2 shallots, finely chopped
- 1/4 cup brandy
- 1 cup heavy cream
- 3 egg yolks
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- Fresh herbs (such as chives or parsley) for garnish
Instructions
- Bring a large pot of salted water to a rolling boil and cook the lobster tails for about 5-7 minutes until shells turn bright red and meat is opaque. Remove and cool slightly, then extract and cut the meat into bite-sized pieces.
- In a large skillet, melt 2 tablespoons of unsalted butter over medium heat, add shallots, and sauté for 3-4 minutes. Pour in brandy and simmer for 2-3 minutes.
- Lower the heat, stir in heavy cream, and heat through. In a separate bowl, whisk egg yolks with a pinch of salt, then temper with hot cream mixture before adding back to the skillet. Cook gently for another 2-3 minutes until sauce thickens.
- Add lobster meat and nutmeg to the skillet, season with salt and pepper, and stir gently until heated through.
- Serve in shallow bowls, drizzled with remaining melted butter and garnished with fresh herbs.
