  • 4 tablespoons unsalted butter
  • 2 shallots, finely chopped
  • 1/4 cup brandy
  • 1 cup heavy cream
  • 3 egg yolks
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Fresh herbs (such as chives or parsley) for garnish

Instructions

  1. Bring a large pot of salted water to a rolling boil and cook the lobster tails for about 5-7 minutes until shells turn bright red and meat is opaque. Remove and cool slightly, then extract and cut the meat into bite-sized pieces.
  2. In a large skillet, melt 2 tablespoons of unsalted butter over medium heat, add shallots, and sauté for 3-4 minutes. Pour in brandy and simmer for 2-3 minutes.
