- 1 large head of romaine lettuce
- 1 cup halved cherry tomatoes
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 1 medium yellow bell pepper, diced
- 1 medium red bell pepper, diced
- 1/2 cup olives (black or green), pitted and sliced
- 1 cup mozzarella balls
- 4 ounces salami, sliced into strips
- 1/4 cup sliced pepperoncini
- 1/2 cup Italian dressing (store-bought or homemade)
- Salt and pepper to taste
Instructions
- Wash the romaine lettuce thoroughly and dry it. Chop into bite-sized pieces and place in a large salad bowl.
- Slice the cherry tomatoes in half, dice the cucumber, thinly slice the red onion, and dice the bell peppers. Add all to the salad bowl.
- In a small bowl, combine olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing. Whisk until well blended.
- Add the sliced salami, mozzarella balls, olives, and pepperoncini to the salad bowl.
- Drizzle half of the dressing over the salad and toss gently to combine. Add more dressing to taste.
- Serve immediately, garnished with fresh herbs if desired.
