Ingredients

  • 1 large head of romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 medium cucumber, diced
  • 1 small red onion, thinly sliced
  • 1 medium yellow bell pepper, diced
  • 1 medium red bell pepper, diced
  • 1/2 cup olives (black or green), pitted and sliced
  • 1 cup mozzarella balls
  • 4 ounces salami, sliced into strips
  • 1/4 cup sliced pepperoncini
  • 1/2 cup Italian dressing (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Wash the romaine lettuce thoroughly and dry it. Chop into bite-sized pieces and place in a large salad bowl.
  2. Slice the cherry tomatoes in half, dice the cucumber, thinly slice the red onion, and dice the bell peppers. Add all to the salad bowl.
  3. In a small bowl, combine olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing. Whisk until well blended.
  4. Add the sliced salami, mozzarella balls, olives, and pepperoncini to the salad bowl.
  5. Drizzle half of the dressing over the salad and toss gently to combine. Add more dressing to taste.
  6. Serve immediately, garnished with fresh herbs if desired.
