- ¼ cup granulated sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar until wet sand texture. Press into greased 9×9-inch pan. Bake 10 minutes and cool.
- Beat cream cheese until smooth. Gradually add sugar and vanilla. Add eggs one at a time, mixing gently. Pour over crust evenly.
- Bake 25-30 minutes until center is set but slightly jiggly. Cool at room temperature 1 hour, then refrigerate 2-3 hours or overnight.
- Cook blueberries, sugar, cornstarch, lemon juice, and vanilla over medium heat until thickened (5-7 minutes). Cool slightly.
- Spread blueberry topping evenly over chilled cheesecake. Cut into squares and serve chilled.
