- 4 (8-ounce) packages cream cheese, softened
- 1 ¼ cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- ¼ cup all-purpose flour (optional for a denser texture)
Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, melted butter, and sugar until crumbly. Press into a 9-inch springform pan. Bake for 10 minutes and cool.
- In a large bowl, beat softened cream cheese on medium speed until smooth. Gradually add sugar and vanilla extract. Mix in eggs one at a time. Fold in sour cream and flour.
- Pour the filling over the cooled crust. Smooth the top with a spatula. Optionally, bake in a water bath by wrapping the springform in foil and placing it in a pan of hot water.
- Bake for 55-70 minutes, until the edges are set but the center jiggles. Turn off oven and leave the cheesecake to cool for an hour inside the oven.
- Let cool to room temperature, then refrigerate for at least 4 hours or overnight to set.
