- 200g (1 cup) pitted dates, chopped
- 1 tsp baking soda
- 250ml (1 cup) boiling water
- 150g (3/4 cup) unsalted butter, softened
- 150g (3/4 cup) brown sugar
- 3 large eggs
- 200g (1 1/2 cups) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Zest of 1 orange
- Zest of 1 lemon
- 2 tbsp Greek yogurt
- 50g (1/2 cup) walnuts, chopped
- 25g (1/4 cup) almonds, chopped
- 2 tbsp brown sugar
- 1 tbsp butter, melted
- 1/4 tsp cinnamon
- Juice of 1 orange
- Juice of 1/2 lemon
- 3 tbsp sugar
Instructions
- Prepare the dates by placing chopped pitted dates in a bowl, sprinkle baking soda over them, and pour boiling water. Let sit for 10 minutes.
- In a large mixing bowl, cream together softened butter and brown sugar until pale and fluffy. Add eggs one at a time, mixing well after each addition. Stir in orange and lemon zest.
- Gently fold in flour, baking powder, cinnamon, and nutmeg. Add Greek yogurt and softened dates, mixing gently until well incorporated.
- Pour the batter into a prepared cake tin. Mix walnuts, almonds, brown sugar, melted butter, and cinnamon for the nut crumble topping and sprinkle over the batter.
- Bake in a preheated oven at 350°F (175°C) for 40 to 45 minutes, checking with a skewer for doneness.
- Prepare the citrus syrup by combining orange juice, lemon juice, and sugar in a saucepan over medium heat until sugar dissolves.
- Once the cake is baked, let it cool for 10 minutes, then transfer to a wire rack. Drizzle warm citrus syrup over the cake before serving.
