  • 1 tsp baking soda
  • 250ml (1 cup) boiling water
  • 150g (3/4 cup) unsalted butter, softened
  • 150g (3/4 cup) brown sugar
  • 3 large eggs
  • 200g (1 1/2 cups) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tbsp Greek yogurt
  • 50g (1/2 cup) walnuts, chopped
  • 25g (1/4 cup) almonds, chopped
  • 2 tbsp brown sugar
  • 1 tbsp butter, melted
  • 1/4 tsp cinnamon
  • Juice of 1 orange
  • Juice of 1/2 lemon
  • 3 tbsp sugar

Instructions

  1. Prepare the dates by placing chopped pitted dates in a bowl, sprinkle baking soda over them, and pour boiling water. Let sit for 10 minutes.
  2. In a large mixing bowl, cream together softened butter and brown sugar until pale and fluffy. Add eggs one at a time, mixing well after each addition. Stir in orange and lemon zest.
  3. Gently fold in flour, baking powder, cinnamon, and nutmeg. Add Greek yogurt and softened dates, mixing gently until well incorporated.
  4. Pour the batter into a prepared cake tin. Mix walnuts, almonds, brown sugar, melted butter, and cinnamon for the nut crumble topping and sprinkle over the batter.
  5. Bake in a preheated oven at 350°F (175°C) for 40 to 45 minutes, checking with a skewer for doneness.
  6. Prepare the citrus syrup by combining orange juice, lemon juice, and sugar in a saucepan over medium heat until sugar dissolves.
  7. Once the cake is baked, let it cool for 10 minutes, then transfer to a wire rack. Drizzle warm citrus syrup over the cake before serving.
