- 200g pitted dates, chopped
- 1 tsp baking soda
- 250ml boiling water
- 100g unsalted butter, softened
- 120g light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 orange
- 1 tsp ground cardamom
- 180g all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- 100g chopped walnuts
Instructions
- Preheat your oven to 170°C (340°F) and prepare a loaf tin by greasing it and lining it with parchment paper.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Cream together the softened unsalted butter and light brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract, orange zest, and ground cardamom.
- Add the soaked date mixture to the wet ingredients, including the soaking water, and mix well. Gently fold in the dry ingredients and then stir in the chopped walnuts.
- Pour the batter into the prepared loaf tin and smooth the top. Bake for 45–50 minutes, checking for doneness with a skewer.
- Let the loaf cool in the tin for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
