Ingredients

  • 200g pitted dates, chopped
  • 1 tsp baking soda
  • 250ml boiling water
  • 100g unsalted butter, softened
  • 120g light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 1 tsp ground cardamom
  • 180g all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 100g chopped walnuts

Instructions

  1. Preheat your oven to 170°C (340°F) and prepare a loaf tin by greasing it and lining it with parchment paper.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Cream together the softened unsalted butter and light brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract, orange zest, and ground cardamom.
  4. Add the soaked date mixture to the wet ingredients, including the soaking water, and mix well. Gently fold in the dry ingredients and then stir in the chopped walnuts.
  5. Pour the batter into the prepared loaf tin and smooth the top. Bake for 45–50 minutes, checking for doneness with a skewer.
  6. Let the loaf cool in the tin for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
