Instructions

  1. Preheat your oven to 375°F (190°C). Wash and peel the sweet potatoes, cut them into chunks, and boil for 15-20 minutes until tender. Mash and let cool.
  2. In a large mixing bowl, whisk together the all-purpose flour, brown sugar, ground cinnamon, baking powder, and salt.
  3. In a separate bowl, beat the eggs, then add melted butter and vanilla extract. Mix in the mashed sweet potatoes until fully incorporated.

  7. Once baked, let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
