Ingredients
Scale
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, melted butter, granulated sugar, and cinnamon in a bowl.
- Press the crumb mixture into the bottom and sides of the springform pan. Bake for 8-10 minutes, then let it cool.
- In a large bowl, beat the softened cream cheese with sugar until smooth. Add sour cream, eggs, vanilla, and cinnamon, mixing until incorporated.
- Pour the cheesecake filling over the cooled crust, spreading it evenly.
- Combine melted butter, brown sugar, and cinnamon in a small bowl to make the cinnamon swirl. Transfer the mixture into a piping bag or a plastic bag with the corner snipped off.
- Pipe the cinnamon swirl mixture in a spiral pattern over the cheesecake filling. Use a skewer or knife to swirl the cinnamon mixture into the cheesecake.
- Bake for 55-65 minutes until the center is set but still slightly jiggly. Cool in the oven for 1 hour with the door slightly open.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- For the glaze, whisk powdered sugar, milk, and vanilla extract until smooth, then drizzle over the chilled cheesecake.
- Slice and serve chilled.
Notes
- Ensure the cheesecake is fully cooled before refrigerating to prevent cracks.
- Refrigeration for at least 4 hours helps the cheesecake set and enhances the flavors.
- For best results, use room-temperature cream cheese and eggs to avoid lumps.
- Feel free to experiment with different spices like nutmeg or cardamom for a unique flavor twist.
- Consider using a water bath to prevent cracks in the cheesecake during baking.
