Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup granulated sugar or brown sugar
  • 4 tablespoons unsalted butter, softened
  • 2 large eggs
  • 1 and 1/2 cups mashed bananas (about 3 large bananas)
  • 1/3 cup plain Greek yogurt or sour cream
  • 1 teaspoon pure vanilla extract
  • 1/4 cup granulated sugar (for cinnamon swirl)
  • 1 and 1/2 teaspoons ground cinnamon (for cinnamon swirl)
  • 1/2 cup confectioners’ sugar (for icing)
  • 1 tablespoon heavy cream or milk (for icing)
  • 1/4 teaspoon pure vanilla extract (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large mixing bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Mix in mashed bananas, yogurt (or sour cream), and vanilla.
  4. Gradually add dry ingredients to wet mixture and stir until just combined.
  5. In a small bowl, mix 1/4 cup granulated sugar with 1 and 1/2 teaspoons cinnamon for the swirl.
  6. Spoon half of the banana batter into the prepared loaf pan, sprinkle half of the cinnamon sugar mixture, add the remaining batter, top with remaining cinnamon sugar, and swirl gently with a knife.
  7. Bake for 55 to 65 minutes or until a toothpick comes out clean. If the top browns too much, cover loosely with aluminum foil.
  8. Let the bread cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
  9. For icing, whisk together confectioners’ sugar, cream (or milk), and vanilla, then drizzle over cooled bread.

Notes

Store wrapped in plastic wrap or in an airtight container at room temperature for 3-4 days, or freeze for up to 3 months.
