Description
Cinnamon streusel French toast cups are a delightful breakfast treat that combines the classic taste of French toast with a crunchy streusel topping.
Ingredients
Scale
- 6 slices of bread: Choose brioche or challah for a rich flavor. Stale bread works best, but fresh is fine too.
- 4 large eggs: These will create the custard base that makes the cups soft and fluffy.
- 1 cup milk: Whole milk adds creaminess, but you can use any milk you prefer.
- 1 teaspoon ground cinnamon: This spice is essential for that warm, comforting flavor.
- 1 teaspoon vanilla extract: Vanilla enhances the sweetness and aroma of the dish.
- 2 tablespoons granulated sugar: This adds a touch of sweetness to the custard mixture.
- 2 tablespoons unsalted butter (melted): Butter adds richness to the streusel topping.
- 1/4 cup brown sugar: This gives the streusel a deeper flavor and a lovely caramel note.
- 1/4 cup all-purpose flour: Flour helps bind the streusel together, creating that crumbly texture.
- 1/2 teaspoon ground cinnamon (for streusel topping): A little extra cinnamon in the topping enhances the overall flavor.
- Pinch of salt: Salt balances the sweetness and brings out the flavors.
Instructions
- Start by cutting your bread into small cubes, about 1-inch pieces.
- In a small bowl, combine the brown sugar, all-purpose flour, and 1/2 teaspoon of ground cinnamon. Add the melted butter and a pinch of salt, mixing until crumbly.
- In a large mixing bowl, whisk together the eggs, milk, 1 teaspoon of ground cinnamon, vanilla extract, and granulated sugar until well combined.
- Gently fold the bread cubes into the egg mixture and let it sit for about 10 minutes.
- Preheat your oven to 350°F (175°C). Spoon the bread mixture into a greased muffin tin, filling each cup about 3/4 full, and sprinkle the streusel topping over each cup.
- Bake for 20-25 minutes until the tops are golden brown and a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes before serving.
Notes
- Stale bread works best for this recipe as it absorbs the custard better.
- Feel free to customize with fruits or nuts for added flavor.
- Store leftovers in an airtight container in the refrigerator for up to three days.
- For longer storage, freeze the cups wrapped tightly in plastic wrap for up to three months.
