Description
Cinnamon raisin bread is a delightful treat that combines the sweet flavor of cinnamon with the chewy texture of raisins, perfect for breakfast or a cozy snack.
Ingredients
- All-purpose flour: 4 cups (500 grams)
- Granulated sugar: 1/4 cup (50 grams)
- Active dry yeast: 2 1/4 teaspoons (1 packet)
- Salt: 1 teaspoon (5 grams)
- Ground cinnamon: 2 teaspoons (5 grams)
- Milk: 1 cup (240 ml), warmed
- Unsalted butter: 1/4 cup (60 grams), melted
- Eggs: 2 large
- Raisins: 1 cup (150 grams), plump and preferably soaked in warm water for 10 minutes
- Additional butter: for greasing the pan
Instructions
- In a large mixing bowl, combine the warm milk, granulated sugar, and active dry yeast. Let sit for 5-10 minutes until frothy.
- In another bowl, whisk together the all-purpose flour, salt, and ground cinnamon. Add the melted butter and eggs to the yeast mixture, then gradually mix in the dry ingredients until a dough forms.
- Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours until doubled in size.
- Gently punch down the dough, turn it out onto a floured surface, and shape it into a rectangle. Roll tightly to form a log.
- Place the shaped loaf seam-side down in a greased loaf pan, cover, and let it rise for another 30-45 minutes.
- Preheat the oven to 350°F (175°C). Bake the loaf for 30-35 minutes until golden brown and sounds hollow when tapped.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use fresh, high-quality ingredients for the best results.
- Be patient with the rising times for a light and fluffy loaf.
- A slightly sticky dough is okay; avoid adding too much flour.
- Allow the bread to cool completely before slicing to maintain its structure.
