  • Active dry yeast: 2 1/4 teaspoons (1 packet)
  • Salt: 1 teaspoon (5 grams)
  • Ground cinnamon: 2 teaspoons (5 grams)
  • Milk: 1 cup (240 ml), warmed
  • Unsalted butter: 1/4 cup (60 grams), melted
  • Eggs: 2 large
  • Raisins: 1 cup (150 grams), plump and preferably soaked in warm water for 10 minutes
  • Additional butter: for greasing the pan

Instructions

  1. In a large mixing bowl, combine the warm milk, granulated sugar, and active dry yeast. Let sit for 5-10 minutes until frothy.
  2. In another bowl, whisk together the all-purpose flour, salt, and ground cinnamon. Add the melted butter and eggs to the yeast mixture, then gradually mix in the dry ingredients until a dough forms.
  3. Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours until doubled in size.
  5. Gently punch down the dough, turn it out onto a floured surface, and shape it into a rectangle. Roll tightly to form a log.
  6. Place the shaped loaf seam-side down in a greased loaf pan, cover, and let it rise for another 30-45 minutes.
  7. Preheat the oven to 350°F (175°C). Bake the loaf for 30-35 minutes until golden brown and sounds hollow when tapped.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
