Description

Cinnamon Pear Muffins with Walnut Topping are a delightful treat that combines the sweetness of ripe pears with the warm, comforting flavor of cinnamon, topped with a crunchy walnut streusel.

Ingredients

  • All-purpose flour: 2 cups (240 g)
  • Ripe pears: 2 medium, peeled and diced
  • Brown sugar: 3/4 cup (150 g), packed
  • Ground cinnamon: 1 teaspoon
  • Baking powder: 2 teaspoons
  • Salt: 1/2 teaspoon
  • Eggs: 2 large
  • Milk: 1/2 cup (120 ml)
  • Butter: 1/2 cup (115 g), melted and slightly cooled
  • Vanilla extract: 1 teaspoon
  • Walnuts: 1/2 cup (60 g), chopped (for streusel topping)
  • Additional brown sugar: 1/4 cup (50 g) (for streusel topping)
  • Additional ground cinnamon: 1/2 teaspoon (for streusel topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, brown sugar, cinnamon, baking powder, and salt.
  3. In a separate bowl, beat the eggs and mix in the milk, melted butter, and vanilla extract. Combine with the dry ingredients and fold in the diced pears.
  4. Prepare the walnut topping by mixing chopped walnuts, brown sugar, and cinnamon in a small bowl.
  5. Fill each muffin cup about two-thirds full with the batter and sprinkle the walnut topping on top.
  6. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Choose ripe pears for the best flavor and moisture.
  • Store leftover muffins in an airtight container at room temperature for up to three days.
  • For gluten-free muffins, substitute all-purpose flour with a gluten-free blend and add xanthan gum.
  • For a vegan version, replace eggs with flaxseed meal or chia seeds and use plant-based milk and butter.
