Description

Cinnamon Crunch Bread is a soft, fluffy loaf swirled with cinnamon sugar and topped with a sweet, crunchy streusel topping. Perfect for breakfast, brunch, or a comforting snack.

  • 1/2 cup buttermilk, warmed to about 110°F
  • 1/3 cup water, warmed to about 110°F
  • 2 and 1/4 teaspoons instant or active dry yeast (1 packet)
  • 1/4 cup granulated sugar, divided
  • 5 tablespoons unsalted butter, melted and slightly cooled
  • 1 large egg, at room temperature
  • 1 teaspoon salt
  • 3 cups bread flour, spooned and leveled (plus more as needed)
  • 3 tablespoons unsalted butter, extra soft (for filling)
  • 1/3 cup packed light or dark brown sugar (for filling)
  • 1 and 1/2 teaspoons ground cinnamon (for filling)
  • 2 tablespoons unsalted butter, melted (for topping)
  • 1/3 cup packed light or dark brown sugar (for topping)
  • 1 and 1/2 teaspoons ground cinnamon (for topping)
  • 2 teaspoons all-purpose flour or bread flour (for topping)

Instructions

  1. Whisk warm buttermilk, water, yeast, and 2 tbsp of granulated sugar in a bowl. Cover and let sit for 5 minutes until foamy.
  2. Add remaining sugar, melted butter, egg, salt, and 1 cup of flour. Beat on low for 30 seconds, then gradually add remaining flour until dough forms.
  3. Knead the dough for 5 minutes with a mixer or by hand until smooth and slightly tacky. Add more flour if necessary.
  4. Grease a bowl, place dough in it, cover, and let it rise until doubled in size (1–2 hours).
  5. Punch down dough and roll it into a 9×15 inch rectangle on a floured surface.
  6. Spread softened butter on the dough, then mix and sprinkle brown sugar and cinnamon over it.
  7. Roll up the dough from the long side into a log. Slice lengthwise and twist the two pieces together, keeping the cut side up.
  8. Place the twisted dough in a greased 9×5 inch loaf pan. Cover and let rise for 30 minutes.
  9. Preheat oven to 350°F (177°C). Mix melted butter, brown sugar, cinnamon, and flour for the topping and spread over risen dough.
  10. Bake for 45–55 minutes, until golden brown and sounds hollow when tapped.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

  • Use room temperature ingredients for best mixing results.
  • Measure flour by spooning and leveling, not scooping.
  • To make buttermilk, combine 1/2 cup milk with 1/2 tbsp vinegar or lemon juice.
  • Ensure liquids are warm, not hot, to activate yeast without killing it.
