Description

  • 160g semolina (1 cup)
  • 60g all-purpose flour (1/2 cup)
  • 100g sugar (1/2 cup)
  • 120g plain yogurt (1/2 cup)
  • 180ml olive oil or vegetable oil (3/4 cup)
  • 2 large eggs
  • 120ml milk (1/2 cup)
  • 2 medium apples, peeled and chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder (5g)
  • 1/2 teaspoon baking soda (2g)
  • 1/4 teaspoon salt (1g)
  • 1 teaspoon vanilla extract (5ml)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a 23cm (9-inch) round cake pan.
  2. In a large mixing bowl, whisk together the semolina, all-purpose flour, sugar, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, yogurt, milk, vanilla extract, and oil until smooth and fully combined.
  4. Gradually add the wet mixture to the dry ingredients. Stir gently until the batter is smooth and fully incorporated.
  5. Fold in the chopped apples and lemon zest (if using) until evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before serving.

Notes

  • Do not overmix the batter as it can make the cake dense.
  • For a richer flavor, mix different apple varieties like Granny Smith and Honeycrisp.
