- 160g semolina (1 cup)
- 60g all-purpose flour (1/2 cup)
- 100g sugar (1/2 cup)
- 120g plain yogurt (1/2 cup)
- 180ml olive oil or vegetable oil (3/4 cup)
- 2 large eggs
- 120ml milk (1/2 cup)
- 2 medium apples, peeled and chopped
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder (5g)
- 1/2 teaspoon baking soda (2g)
- 1/4 teaspoon salt (1g)
- 1 teaspoon vanilla extract (5ml)
- Zest of 1 lemon (optional)
Instructions
- Preheat your oven to 175°C (350°F). Grease and flour a 23cm (9-inch) round cake pan.
- In a large mixing bowl, whisk together the semolina, all-purpose flour, sugar, ground cinnamon, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs, yogurt, milk, vanilla extract, and oil until smooth and fully combined.
- Gradually add the wet mixture to the dry ingredients. Stir gently until the batter is smooth and fully incorporated.
- Fold in the chopped apples and lemon zest (if using) until evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before serving.
Notes
- Do not overmix the batter as it can make the cake dense.
- For a richer flavor, mix different apple varieties like Granny Smith and Honeycrisp.
- The cake can be served warm or at room temperature, dusted with powdered sugar for an extra touch.
- Store leftover cake covered at room temperature for up to 2 days or refrigerate for up to a week.
- To freeze, wrap the cake tightly and store for up to 3 months.
