Ingredients
- Long-grain white rice: 1 cup (uncooked)
- Water: 2 cups
- Fresh cilantro: 1/2 cup, chopped
- Lime juice: 2 tablespoons (freshly squeezed)
- Garlic: 2 cloves, minced
- Olive oil: 1 tablespoon
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
Instructions
- Rinse the rice under cold running water until the water runs clear.
- In a medium saucepan, combine the rinsed rice with 2 cups of water and 1 teaspoon of salt. Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes.
- In a small bowl, combine chopped cilantro, lime juice, minced garlic, olive oil, black pepper, and a pinch of salt. Mix well.
