Ingredients

  • Long-grain white rice: 1 cup (uncooked)
  • Water: 2 cups
  • Fresh cilantro: 1/2 cup, chopped
  • Lime juice: 2 tablespoons (freshly squeezed)
  • Garlic: 2 cloves, minced
  • Olive oil: 1 tablespoon
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon

Instructions

  1. Rinse the rice under cold running water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice with 2 cups of water and 1 teaspoon of salt. Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes.
  3. In a small bowl, combine chopped cilantro, lime juice, minced garlic, olive oil, black pepper, and a pinch of salt. Mix well.
