- 6 tablespoons heavy cream
- 1/2 cup quality chocolate chips
- 1 1/4 cups shelled roasted pistachios
- 2 cups heavy cream, cold
- 14-ounce can full fat sweetened condensed milk
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract
- Optional: tiny drop green gel food coloring
- Optional toppings: 2 tablespoons roughly chopped pistachios
- Optional toppings: 2 tablespoons roughly chopped chocolate chips
Instructions
- Make chocolate ganache: Heat 6 tablespoons heavy cream until simmering. Pour over chocolate chips and let sit 2-3 minutes, then whisk until smooth. Set aside to cool.
- Pulse pistachios in a food processor until finely ground but not paste. In a large bowl, whip 2 cups cold heavy cream to stiff peaks.
- Fold in ground pistachios, sweetened condensed milk, vanilla extract, almond extract, and optional green gel coloring until just combined.
- Layer half the pistachio mixture in a freezer-safe container. Spoon half the cooled ganache over it and spread gently. Add remaining pistachio mixture on top and drizzle remaining ganache. Swirl gently with a knife or skewer.
- Optional: sprinkle chopped pistachios and chocolate chips on top. Cover tightly and freeze at least 8 hours until firm.
