Description

Creamy homemade Chocolate Swirl Pistachio Ice Cream combines nutty pistachios with luscious chocolate ganache for a rich, refreshing treat.


Ingredients

  • 1/2 cup quality chocolate chips
  • 1 1/4 cups shelled roasted pistachios
  • 2 cups heavy cream, cold
  • 14-ounce can full fat sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract
  • Optional: tiny drop green gel food coloring
  • Optional toppings: 2 tablespoons roughly chopped pistachios
  • Optional toppings: 2 tablespoons roughly chopped chocolate chips

Instructions

  1. Make chocolate ganache: Heat 6 tablespoons heavy cream until simmering. Pour over chocolate chips and let sit 2-3 minutes, then whisk until smooth. Set aside to cool.
  2. Pulse pistachios in a food processor until finely ground but not paste. In a large bowl, whip 2 cups cold heavy cream to stiff peaks.
  3. Fold in ground pistachios, sweetened condensed milk, vanilla extract, almond extract, and optional green gel coloring until just combined.
  4. Layer half the pistachio mixture in a freezer-safe container. Spoon half the cooled ganache over it and spread gently. Add remaining pistachio mixture on top and drizzle remaining ganache. Swirl gently with a knife or skewer.
  5. Optional: sprinkle chopped pistachios and chocolate chips on top. Cover tightly and freeze at least 8 hours until firm.
