Instructions
- In a large bowl, cream softened butter and oil until fluffy. Add granulated and brown sugars; beat until light and airy.
- Add the egg and vanilla extract or raspberry liqueur. Mix until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until a thick dough forms.
- Fold in raspberry preserves gently with a spatula.
- Cover the dough with plastic wrap and chill for at least 3 hours.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Grind freeze-dried raspberries into powder and mix with confectioners sugar.
- Shape dough into 1.5-tablespoon-sized balls. Roll in raspberry sugar topping.
- Place on baking sheets, spaced apart. Bake for 12–14 minutes.
- Let cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
